Heather's Lemony Three-Bean Salad Recipe

12 oz green beans, cut into 2" pieces and blanched
1 can chickpeas
1 can red kidney beans
1 c diced fresh tomatoes
1/2 c chopped red onion
1/4 c minced parsley

Combine the above in medium bowl. I often add minced green onion, minced garlic and/or thinly sliced cabbage. Any combination of canned beans will work.

1/2 c olive oil
3 T lemon juice
1 T lemon zest
1 t salt
3/4 t cracked pepper

Combine the above mix well and pour over salad ingredients.
