One More Wild Rice Recipe from the Retreat!

Here is Wendy T.'s recipe from the retreat. Enjoy!

Wild Rice Casserole
½ cup washed, uncooked wild rice
½ cup washed, uncooked brown rice
¼ cup butter
1 cup diced onion
1 cup diced celery
1 cup sliced mushrooms
3 ½ cups chicken broth
salt
1 tsp thyme
1 tsp sage

Saute uncooked rice , onion, celery and mushrooms in butter 3-5 minutes.
Place in 1 ½ quart casserole and add hot chicken broth. Cover and bake at 325 degrees F for 1 ½-2 hours.

Can be used as stuffing.

Wild Rice Recipe from the Retreat

Wild Rice Salad

This is a guideline (substitute anything you have on hand).

To cooked wild rice add: chopped green onions, thinly sliced/diced dried apricots, dried cranberries, chopped parsley, toasted almonds/pecans. (I often put in diced peppers). Use your favourite vinaigrette dressing or try the following: whisk together 1/2 c frozen orange juice concentrate, 3+ tbsp balsamic vinegar, 1/3 c olive oil/vegetable oil, 2 tsp Dijon mustard, 1 tsp+ minced garlic, S & P/other herbs.
